Things you ask Siri are associated with a random identifier, not your Apple ID.
Because HomePod mini supports HomeKit Protected Video, it can analyze your camera footage to detect when someone approaches your door and distinguish between familiar people, pets, and cars. Videos are processed on-device before being sent to iCloud with end-to-end encryption. They can only be played by you and the people you authorize. Apple has nothing to do with that.
